This Instant Pot Easy Sweet Pork is one of our favorite recipes. It is full of flavor and pairs nicely with any Mexican cuisine.
What could I serve this Instant Pot Sweet Pork on?
This has got to be my most favorite meat. It is so sweet and savory, and I could honestly just eat it plain. (I’ll admit, I have eaten it plain many times).
It’s so easy to pair with just about any Mexican cuisine, you love. Here are our favorites:
–Sweet Pork Quesadilla: Add some cheese, a little sweet pork, a little extra cheese, and melt to your hearts content. Dip in guacamole and sour cream, and your life is changed for the better.
–Tacos: Soft shell or hard, these Sweet Pork Tacos will blow your mind.
–Enchilada: Need I say more? Delicious sweet meat smothered in sweet enchilada sauce.
–Burritos: Much like enchiladas, this one speaks for itself. Your mind will be blown with a little rice and bean mixture up in there, drenched in the sweet pork meat.
–Nachos: More like nacho grande. Go big with these and add all the nacho toppings to create a masterpiece that will haunt your sleep, because you won’t stop thinking about how delicious they were.

How to turn this Instant Pot Sweet Pork into a freezer meal:
Place roast, Coca Cola, brown sugar, and taco sauce into a gallon-sized freezer bag. Place freezer bag into freezer and it will last up to 90 days.
When ready to use, dump ingredients from bag into Instant Pot and add 1/2 cup chicken broth or water in with the frozen food. Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 180-240 minutes (or about 30 minutes per pound of your roast).
Do a NATURAL RELEASE when the timer is done – I even like to let it sit in the Instant Pot for a few hours so that it falls apart so easily. Follow the rest of the instructions as written.

INSTANT POT EASY SWEET PORK RECIPE
Dinner has never been easier, thanks to my Instant Pot. It is so simple and full of flavor. This Easy Sweet Pork is my family's favorite meal. It has so much flavor and tastes amazing. You are going to love this simple and healthy dish.

Ingredients
- 6-8 lb pork roast
- 2 cups cola
- 1 cup brown sugar
- 1 bottle taco sauce
Instructions
Place your roast in an Instant Pot and pour Coca Cola over roast. Sprinkle brown sugar over roast, followed by the taco sauce.
Put on the lid and push the meat button. Cook on high pressure for 90 minutes. Then do a quick release.
When it is finished cooking, take the pork roast out of the Instant Pot and shred. Then add back into the juices in the Instant Pot.
Using a slotted spoon, serve on tortillas with your favorite toppings. I like black beans, onions, tomatoes, guacamole, and cheese. You could also serve it on lettuce and make a delicious salad.

At the top of the recipe it says cook time is 8 hours, but in the body of the recipe in the instructions, it says to cook it for 90 minutes. I assume that the 8 hours would be in the crockpot, but 90 minutes for the instant pot. Just checking for clarification. Thanks!

Everything I have tried so far has failed (only used 2 times maybe 3) haha my hubby says and you just had to have it. . Haha But I would love to use it more! We both work and are busy! So I just made this for dinner (or tried to) when I went get it out and shred it the pork was not fully cooked at all. I put it in for another hour and hopefully it will be good tomorrow but dinner tonight was a bust. Any idea what happened? I followed the recipe and my pot appeared to be sealed and working normally.

Not hard. Work with the 6 lb roast as mentioned. Get a three lb roast and cut everything else in half. You can never have too much sauce. It is good for all kinds of things like over rice, etc.

In step 3 it says slow cooker and then it says instant pot. Obviously it's a editing mistake I just wanted to point that out. Also if you are using an 8 quart should I add 1 cup of water?

Thanks for catching that error. If you are using the 8 quart, just follow the directions the same. But if you are nervous for the burn notice, you can always add some water. It won't change the flavor of the pork.
